Spanning 33,200 square feet, the transformation of Level 5 at the Hong Kong Jockey Club’s Sha Tin Clubhouse marks one of the most extensive interior refurbishments undertaken within the Club’s history. Appointed as main contractor, TCG in Hong Kong worked alongside DLN Architects and Stylus Studio Limited to deliver a complete renewal of the Club’s dining and social spaces.

This post traces the journey of that transformation. From reimagining three distinct venues: Centurion Restaurant, Bistro Canter, and Kat O Bar, into a cohesive hospitality experience, to managing precision joinery and finishes that define the Club’s signature elegance. It also looks at the operational discipline required to deliver a full-floor refurbishment in an active clubhouse.
Transforming a Landmark Level for Modern Dining
For Hong Kong, the Jockey Club stands as an anchor of civic life and one of the city’s largest charitable contributors. This civic significance shaped both the aesthetic and technical ambitions of the project, calling for a fit out that respected heritage while embracing contemporary standards of quality and comfort.

The brief was clear: Level 5 of the Hong Kong Jockey Club’s Sha Tin Clubhouse needed a renewal of atmosphere and intent, a place where members could dine, socialise, and unwind in settings that felt distinct yet connected. Working with DLN Architects and Stylus Studio Limited, we reimagined the entire floor into three contemporary dining destinations: Centurion Restaurant, Bistro Canter, and Kat O Bar.
Each venue carries its own rhythm. Centurion Restaurant reflects the grace of French fine dining. Bistro Canter captures the relaxed warmth of a modern bistro, expressed through a racing green palette that bridges tradition and modernity. Kat O Bar introduces vibrancy inspired by the thrill of race day, its deep red tones mirroring the spectacle of the track.


As Stylus Studio puts it, “Horse-racing elements are sprinkled across the property beautifully between race and leisure days.” That influence is felt in the rhythm of the spaces and the balance of colour and finish. Subtle enough for everyday dining, expressive when the race begins.
Delivered under a traditional procurement model, TCG in Hong Kong coordinated specialist contractors, suppliers, and consultants within a 9.5-month programme. The result is a revitalised destination that reflects the Club’s enduring commitment to excellence in every detail.
Fit Out Detailing and Quality Assurance
Translating DLN Architects’ concept into built form demanded precision. The interiors combined intricate joinery, layered finishes, and a clear material language that unified the floor while preserving each venue’s character. A recurring bronze coin motif runs quietly through the spaces. In lights, handles, floors, and wall details, a subtle expression of the Club’s heritage that required coordination between design intent and on-site execution.

Throughout the process, we worked closely with DLN Architects, the lead consultant responsible for contract administration, code compliance, and the execution of A&A works. In parallel, significant time was dedicated to engaging with the Jockey Club’s internal F&B operations team, ensuring that every design and construction decision supported their operational needs. The outcome reflects a shared pursuit of excellence, shaped by collaboration and grounded in the Jockey Club’s uncompromising standards.
Delivering in an Live Hospitality Setting

The Sha Tin Clubhouse remained operational throughout construction, requiring our team to plan every activity around ongoing member use and staff movement. Work zones were isolated, noise and dust tightly managed, and logistics timed to avoid peak hours. These strategies ensured the project advanced without disrupting the daily rhythm of the Club.
Maintaining this balance called for careful planning in scheduling and constant communication with the F&B operations team. The transformation of the Jockey Club’s dining experience reflects our strength in managing complex hospitality works within live environments.
